THe Palestinians whom I henna hereabouts have henna recipes that use yeast, and they consider it useful for the henna to "boof" or puff. I'm guessing that the fermentation helps break down the cellulose a bit, and makes the batch a little sour. I found two other old Arab texts that mentioned adding yeast to the mix.
