From a cost point of view, it's also more cost effective to buy the powder and mix it up than it is to buy pre-mix. I also have very sensitive skin, so it's better for me to mix up the henna myself so that I know exactly what went into it. Henna paste is not FDA regulated, so some manufacturers add "mystery meat" ingredients which may be bad for you. All that said, if mixing henna paste up yourself still sounds scary, a really good premix to get is Mehendi Mud. I've always gotten really good red-brown stains from it, but it is a tad expensive.
