A stash of tamarind and dried limes is a good thing to have when you find lemons pricey or you just plain forgot to get any! Acid is more effective at getting hennotannic acid released from the leaves than a neutrual (such as water) by about 4 to 1 on a 70F day. If the weather is very hot .... 100F, distilled water or rain water is a better thing, as the demise will set in too fast. (unless you inert your paste: remove all oxygen or anything else that would react with the dangly H).
