Citric acid question

If Citric Acid from limes and lemons is what helps bring out the color of the dye in the paste, could citric acid crystals be used in the same way? I recently went to a indian grocery store and found packs of crystal Citric acid. When I asked my co-worker (hindu) about the Citric acid packs she said that they use it in some receipes for baking and cooking.
So it's edible and is safe for food preperation, but could it be used in the paste instead of lemons or limes?
It sounds very concentrated, I'm thinking if it's possible to use in the paste, how will it affect the stain?
Does anyone have any ideas or knowledge on this? Please share.
