I've never gotten the bloodred color from boiling dried limes, either,
but it does turn reddish.

THe only advantage I can see from boiled limes is that dried limes
last a lot longer than fresh ones -- so if you have limited or no
fridge space, that's a big plus. And I think it's cool that the color
of the water of dried limes is different from boiled fresh limes.
